When you hold handcuffs in your hand, you can with right click cuff somebody. If the player is cuffed, you can with right click (without an item in hand) take him on your head and transport him (It's very simple but a nice solution because you can use vehicles with ease). If the cuffed player is on your head you can simply with shift click put him down. And to remove the handcuffs you will need to use a key.

PLACEHOLDER:
You can use a placeholder that will show if the player is handcuffed...
E.g as a prefix/belowname - to know if he is handcuffed

To handcuff someone - ridecuffs.puton 
To release someone with the key - ridecuffs.detach
